ಸ್ವಯಂಪಾಕ ಅಭಿಮಾನಿಗಳಿಗೆ,

“ಊಟ ಬಲ್ಲವನಿಗೆ ರೋಗವಿಲ್ಲ”  ಎಂಬ ಮಾತು ಸರ್ವಕಾಲಕ್ಕೂ ಸತ್ಯ. ನಮ್ಮ ಪೂರ್ವಿಕರು  ಆಚಾರ – ವಿಚಾರ, ಆಹಾರ – ವಿಹಾರಗಳಿಗೆ ಒತ್ತುಕೊಟ್ಟು ಆರೋಗ್ಯದ ಜೀವನ ನಡೆಸಿದರು. ಋತುಮಾನಗಳಿಗೆ ತಕ್ಕ ಹಾಗೆ ಆಹಾರದಲ್ಲಿ ಬದಾಲಾವಣೆ ಮಾಡಿಕೊಂಡು ದೇಹವನ್ನು ರೋಗಮುಕ್ತವನ್ನಾಗಿಸಿಕೊಂಡು ಸಧೃ್ಡಡರಾಗಿದ್ದರು.ಚಿಕ್ಕ ಪುಟ್ಟ ಕಾಯಿಲೆrajiಗಳು ದಿನನಿತ ಸೇವಿಸುವ ತರಕಾರಿ, ಹಣ್ಣು ಹಂಪಲು ಗೆಡ್ಡೆ ಗೆಣಸು ದವಸ-ಧಾನ್ಯಗಳಿಂದಲೇ ಗುಣವಾಗುತ್ತದೆ ಎಂದು ಬಲವಾಗಿ ನಂಬಿದ್ದರು .ಆದರೆ ಇಂದು  ಆಧುನಿಕತೆಯ ಜೀವನ ಶೈಲಿ ಅಡುಗೆ ಮನೆಯನ್ನೆ ಬದಲಾಯಿಸಿದೆ. ಆಹಾರ ಪದ್ಧತಿಯನ್ನೆ ಬುಡಮೇಲು ಮಾಡಿದೆ . ಸಂಸ್ಕರಿಸಿದ ಆಹಾರ (processed foods) ದರ್ಶಿನಿಗಳ ಉಪಹಾರ, ready to eat ಮುಂತಾದ ದಿಡೀರ್ ಖಾದ್ಯಗಳ ಆರ್ಭಟದಲ್ಲಿ ಹಿಂದಿನ ಕಾಲದ ಮನೆ ಅಡುಗೆಗಳು ಮಾಸುತ್ತಾ ಬರುತ್ತಿದೆ. ಈಗಿನ  ಆಹಾರ ಪದ್ದತಿಗಳು ಹೊಸಹೊಸ ರೋಗಗಳನ್ನು ಹುಟ್ಟುಹಾಕುತ್ತಿರುವುದು ಆತಂಕಕ್ಕೆ ಎಡೆ ಮಾಡಿದೆ. ಇದನ್ನೆಲ್ಲ ನೋಡುತ್ತಿರುವ ನನಗೆ ಆರೋಗ್ಯ ಮೂಲದ  everyday recipes ಎಲ್ಲರಿಗೂ ತಿಳಿಸುವ ಉದ್ದೇಶವೇ ಈ ಸ್ವಯಂಪಾಕದ ಹುಟ್ಟು.

Originally ನಾನು ಚಿಕ್ಕಮಗಳೂರು ಹತ್ತಿರದ ಒಂದು ಸಣ್ನ ಹಳ್ಳಿ ಕೂದುವಳ್ಳಿಯವಳು. ಮೈಸೂರಿನ SJCE ನಲ್ಲಿ ಇಂಜಿನಿಯರಿಂಗ್ ಮುಗಿಸಿ, ೧೯೯೩ರಲ್ಲಿ,ಮದುವೆಯನಂತರ ಅಮೇರಿಕ ಪಯಣ, ಇಲ್ಲೆ ನಮ್ಮ ವಾಸ. ನನ್ನ ತಂದೆ MSEB ನಲ್ಲಿ  Engineer.ಆಗಾಗ್ಗೆ ವರ್ಗಾವಣೆಗಳು. ಹೀಗಾಗಿ ಆ ಊರುಗಳ ವೈವಿದ್ಯ ಖಾದ್ಯಗಳ ಪರಿಚಯ.ತಂದೆ ಮಲೆನಾಡು, ಅಮ್ಮ ಬಯಲುಸೀಮೆ, ಅತ್ತೆ ಮನೆ ಉತ್ತರ ಕರ್ನಾಟಕ, so, ಮೂರು ಸೀಮೆಯ ಅಡುಗೆ ನಮ್ಮ ಮನೆಯಲ್ಲಿ .ಅಲ್ಲದೆ ನನ್ನ ಭಾವ biochemist, ಅವರು ಹಿರಿಯರ ಆಹಾರ ಪದ್ಧತಿಯೇ ಆರೋಗ್ಯದ ಗುಟ್ಟು ಎಂಬುದನ್ನು ವೈಙ್ನಾನಿಕ ವಿಶ್ಲೇಷಣೆಯೊಂದಿಗೆ ಹೇಳುವುದೂಕೂಡ ನನ್ನ ಈ ಪ್ರಯತ್ನಕ್ಕೆ ಪ್ರೇರಣೆ. ನನ್ನ ಅಮ್ಮ 80ರ ಹರಯದ ಹುಡುಗಿ. ಇವತ್ತಿಗೂ ಅವಳು  ಶ್ರಮಜೀವಿ (she cooks, washes dishes and wash her clothes). ಅವಳಿಂದ  ಕಲಿಯುತ್ತಿರುವುದು ನಾನು ಮನೆ ಅಡುಗೆ, ಜೀವನದ ಉತ್ಸಾಹ ಮತ್ತು hard work. ಇವು ಜೊತೆಯಲ್ಲಿ ಇದ್ದರೆ ಎಲ್ಲ ರೋಗಗಳಿಗೂ ಬೈ ಬೈ….

    Hi Raji just had a question regarding kajjaya recipie which grinder do you use to powder the rice and which kind of rice is best for it.i tried the long grain rice but my preethi chef pro didn’t grind to fine powder it was more like rava consistency

      I use panasonic mixer, and sona masoori is good to use.
      Also what you can do is sieve the powder to get the fine powder, some mixers are just not right 🙂

    I am a big fan of your YouTube channel! I grew up in Bangalore and really missed all the great vegetarian food there. Now I am cooking more and more of your yummy recipes 🙂
    I see that you avoid non-stick utensils and plastics, which I do too, and I am a great believer that food can cause and cure so many of our ailments. Just wanted to share a tip with you, I make ghee at home too and I found that making it in a cast iron vessel makes it ever so yummy. Please keep sharing your expertise!

    First of all, thank you for your blog!!! I have tried almost all of your recipes and they have come out so perfect. You explain such a way that no cooking gets spoiled… very detailed explanation and perfect measurements… even salt(which is main for me)

    Please give me tips making akki/ragi rotti… Always my rotti is harder to chew. Don’t know where I am going wrong!!!

      ABout rotti, it is not you who is doing wrong but the Hittu/flour which it making it hard, you can try making akki rotti with brown rice flour which is available in the health food stores, that is much better compared to one we buy from Indian store.

    Good?.planning to buy it. Also can you post uddina vade recipie? From soaking to grinding and consistency?(whenever you are free and plan to do it).

    Hi raji just checking if you know how to do a very traditional and old recipie from malnad.it is called avagu/avgu.it is very famous and very old and traditional. Made from rice and Jaggery I know it is pretty tedious.one of my cousin knows one place close to bhadravathi where they still do it. I remember eating it as a kid bcoz one of my Ajji’s cousin used to make it.it is so good. If you go to India sometime and visit shimoga,bhadravathi, taste it.

    Hi Raji have you heard of really old traditional sweet made in malnad.it is called avgu/avagu made from rice and jaggery.these days only few places they make it. I remember eating it as a kid.one of my grandmas cousin used to make them.

      Avagu needs old traditional ole(stove) , so it is not possible to make at homes like ours 🙂

    hi Raji and Mamata you both are the best cooks i guess i love to cook also ur cooking style is as like how we cook backhome though i cant understand all the instructions due to language so if you can pls put all the instructions in english subtitles for all the receipes can be of great help for eg these receipes has english subtiles which i feel are not enough as i couldnt understand how to store these receipes and how long can u store it so please do the necessary changes as i always follow ur receipes a lot . Thanks a lot and keep posting the traditional receipes it helps a lot for us .

          You can store it in a glass jar and it will be good for 2 to 3 months and if you keep it in the refrigerator, 6 months no problem!

Nimma video node nenne yugaadi habbakke holige madide.. namma mane kade lattisuvudilla, yenne hachi spread madthivi.. so haage madakke hogi hoorna ella ondu kade aithu, kanaka ella ondu kade banthu (This is my first attempt all by myself. Nobody to help as I’m not in India). Anyway amele nam amma helidru nanu chiroti rave li madbekithu instead of maida anta.. Will try that and tell you how it is. 😀 But really why I messaged you was suddenly I remembered this sauce/chutney kind of thing called “Mahabharata”.. mavinkayi mathe mensinkayi haaki madirthare.. onderadu sala yavdo function alli thinda napka.. ammanige/atthege recipe gotthilla 😛 nimage gothirbohuda anta kelona ankonde. If you know it can you please share it? I can’t stop thinking about it from last 4-5 days 🙁 huli huliyaagi khaara khaaravagi olle sakathagithu 🙂 I don’t know if it is a traditional brahmin recipe!
