Ingredients
- ಕರಿಯಲು ಎಣ್ಣೆ oil to fry
- around 3/4 cup ನೀರು water
Instructions
- Keep all the ingredients ready.
- Warm the maida / all-purpose flour.
- To a bowl add rice flour, rave, and warm maida flour along with red chilli powder, salt, and green chillies. Mix it well.
- Heat 3 TBSP oil in a ladle and add this to the above mix.
- Mix it and then add onion and curry leaves. Mix again really well.
- Divide the mix into 2 parts (since onion has a tendency to leave the water,we are dividing the mix and making dough 2 times)then to one half add water little by little while mixing it. Make it a soft dough.
- Now heat around 2 cups of oil in a pan on medium heat.
- Divide the prepared dough into 10 equal parts. Grease the plastic sheet and take one ball and press in onto this sheet to make a circle.
- Once the oil is hot enough (check by adding a little dough to the oil, it has to come up immediately), add this prepared vada to it. Make2 to 3 vade, one by one and add it to the oil.
- Deep fry it until both sides turn a light golden brown color. It usually takes 4 to 5 minutes.
- Remove it from the oil and place it onto a paper towel to drain extra oil.
- Enjoy the Maddur vada with Coconut Chutney. Perfect snack for winter, with a cup of Coffee or Tea.
- Repeat the same procedure for the remaining dough and the mix.
- Divide the mix into 2 parts (since onion has a tendency to leave the water,we are dividing the mix and making dough 2 times)
