fried rice recipe | easy chinese fried rice

Craving for Chinese fried rice? Here we have an easy, tasty fried rice recipe!
All we need is basmati rice, soy sauce and vegetables of your choice.You can even make this recipe with leftover rice as well.
Recommended oil is sesame seeds oil and for the restaurant aroma and taste of fried rice.
Green onions are required for garnish. This is a vegan rice dish.

Ingredients for fried rice:

  • 1 cup basmati rice
  • 1/4 cup each of the following vegetables
  • beans
  • carrot
  • spring onion
  • capsicum (red, yellow and green )
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1 tsp pepper powder
  • 1 tsp dark soy sauce
  • 2.5 tbsp cooking oil

Method:

  1. Wash and soak the rice for 20 minutes
  2. Drain the water using a colander
  3. Boil 4 cups of water in a pan.
  4. Add soaked rice, 2 tsp oil , and 1/4 tsp salt, mix it well. Let it boil.
  5. when it is 70% cooked( 7 minutes on high heat). Drain the water using a colander
  6. Heat the oil in a pan on high heat.
  7. Once the oil is hot add white part of chopped spring onion, mix it
  8. Add green beans, carrots and capsicum as well. Add sugar(which helps to retain the vegetable color) Fry it on high heat for 3 to 4 minutes
  9. Then add pepper powder and soy sauce. Mix it well.
  10. Add cooked rice, salt , and mix it. Cook for 2 minutes by gently mixing in between.
  11. Then add chopped green onion (green part of spring onion). Mix it . Turn off the heat and cover it, let it sit for 3 minutes.
  12. Fried rice is ready to serve.
