uddina vade | medu vada

Uddina vade or Medu Vada is a popular South Indian snack made from a spiced batter of black gram lentils (urad dal) that is deep-fried into a crispy, doughnut-shaped fritter. The term “medu” means soft in Kannada and Telugu, and “vada” refers to the fritter. The dish is characterized by its crunchy exterior and soft, fluffy interior.

Ingredients:

  • 1/2 cup uddina bele/urad dal/split black gram
  • wash and soak it in a cup of water for 1 + hours
  • 1.5 tsp salt or salt to taste
  • 2 tbsp finely chopped fresh ginger
  • 2 tbsp coconut pieces
  • 6 green chillies(finely chopped)
  • chopped coriander leaves
  • chopped curry leaves

NOTE:quantity of the ginger,coconut, chillies, coriander and curry leaves  are to your taste

  • ~1/2 cup rice flour (add to need basis)
  • 1 tsp coarsely powdered pepper
  • oil to fry the vade

Method:

  1. Grind the soaked dal, preferably in a grinder, adding a little water at a time. Grind it to the consistency shown here.
  2. Transfer the batter to a bowl, add all the other ingredients, and mix well.
  3. Now, add 1/4 cup of rice flour and mix thoroughly.
  4. Wet your palm, take the desired amount of batter, shape it, and gently place it in the hot oil. Add a few more vadas.
  5. After a few minutes, flip the vadas and fry them until both sides turn golden brown.
  6. Once done, remove the vadas onto a colander or paper towel.
  7. Repeat the process with the remaining batter.
  8. If any batter remains, you can soak some rice, grind it along with the leftover batter, and make dosey (dosa)
