Jackfruit seeds vada, known as halasina bijada vade, is a delicious South Indian snack where cooked jackfruit seeds are the main ingredient. These seeds are cooked until tender, then blended with green chilies, and curry leaves, then combined with rice flour, ajwain (carom seeds), fresh coriander leaves, to create a flavorful and aromatic batter. The mixture is shaped into small balls or patties and deep-fried until crispy and golden brown, resulting in a savory treat that is both nutritious and satisfying.

Jackfruit seeds offer a range of health benefits, making them a valuable addition to a balanced diet. Rich in protein, they serve as a great plant-based protein source, especially for vegetarians and vegans. Ingredients:

  • 1 cup jackfruit seeds
  • 1 cup = 250ml
  • ~6 green chillies or to your taste
  • 1.5 inch fresh ginger
  • curry leaves
  • coriander seeds
  • 1 tsp salt or salt to taste
  • 1 tsp ajwain / omam
  • 2 tbsp rice flour
  • oil to fry

Method:

Wash and Cook Seeds:

  1. Wash the jackfruit seeds thoroughly. Place them in a pressure cooker with a cup of water and cook on medium heat. Turn off the heat after 4 to 5 whistles.

Grind Seeds:

  1. Once cooked, grind the jackfruit seeds without adding any water initially. Then add a little of the water used for cooking the seeds and grind it again to a smooth consistency.

Add Ingredients:

  1. Thinly slice the ginger and add it to the mixer jar along with curry leaves and green chilies. Grind everything together until well combined.
  2. Transfer this mixture to a bowl.

To make the vada:

Heat Oil:

  1. Heat oil in a pan on medium heat. To check if the oil is hot enough, add a small bit of the vada mix. If it rises to the surface, the oil is ready.

Form Vadas:

  1. Wet your palm, take a tablespoon of the mixture, and shape it into a small patty. Carefully add it to the hot oil.

Fry Vadas:

  1. Fry the vadas by flipping them regularly with a perforated ladle to ensure even frying on all sides.

Remove and Drain:

  1. Once the vadas turn golden brown, remove them from the oil and place them onto a paper towel to drain excess oil.
  2. Repeat the same procedure with the remaining vada mix.
  3. With the given measurements, you can make around 40 vadas (ambode). Enjoy your crispy and flavorful halasina bijada vade!
