Kotte kadubu | Using jackfruit leaves | Turmeric Leaves | Banana Leaves

Making Kotte Kadubu using jackfruit leaves, Turmeric Leaves, and  Banana Leaves – Detailed Video Instructions.

Malnad region like Sringeri, chikmagalur… and coastal regions like Udupi, Mangalore,in Karnataka are very popular for its unique dishes. They prepare each dishes with simple ingredients – unique and healthy techniques. This Kotte Kadubu is the best example for this.
Making Kotte or a cup is made up of jackfruit leaves or turmeric leaves, or banana leaves. this Eco friendly dish not only induce the flavor to the regular Idli but it has medicinal benefits from these leaves.

Ingredients:

  • Idli batter
  • you can make kadubu with plantain leaves
  • or turmeric leaves
  • or using the jackfruit leaves
  • some thread to tie the kotte
  • for jackfruit leaves, we need coconut leaves sticks
  • Idli steamer

Method:

For better Understanding of the preparation of Kotte or the leaves Cup, please watch the video:

Using Banana Leaves:

  • just warm the banana leaves as shown
  • to make the kotte or the cup  follow the video instructions.
  • if you cannot make the kotte keep the banana leaves in a big long cup as shown in the Video

Making kotte using Jackfruit leaves:

  1. Take 4 fresh leaves , and make the kotte as shown in the video.

Method:

  1. Now to the prepared kotte pour the required amount of batter
  2. Keep all the prepared kadubu in a pan like shown in the video
  3. Steam cook for 15 to 18 minutes on medium high heat., if you are using pressure cooker don’t put weight.

Using the turmeric leaves:

  1. Wash and trim the edges, and put the batter fold it and and place it in a container
  2. Steam cook for 15 to 18 minutes on medium high heat., if you are using pressure cooker don’t put weight.
  3. After it is steam cooked, let it cool for few minutes and then remove the leaves and eat the Kadubu with chutney.
