ginger burfi | shunti mitayi | barfi

To celebrate the new beginning let us prepare this ginger burfi | ginger coconut burfi.
Simple to make, vegan and tasty burfi needs only 3 ingredients – fresh ginger, jaggery and coconut. Hope you enjoy this shunti burfi! Shunti mitaayi

Ingredients for ginger burfi:

  • 1/4 cup grated fresh ginger
  • 1/4 cup grated fresh ginger
  • 1/2 cup jaggery
  • 1/4 cup water
  • grease a plate and keep it ready (with coconut oil or ghee

Method:

  1. Grind ginger,( if it is tender then grind the ginger else grind it with water and strain the juice and use) and then add coconut and pulse it,
  2. Transfer it to a thick bottom pan. add jaggery, add water ( if the jaggery has impurities, clean before adding )
  3. Mix it , keep the pan on medium heat. Keep stirring
  4. Once the jaggery is melted we can increase the flame to medium high, keep mixing
  5. Most of the water is evaporated, reduce the flame to low
  6. Stir it until the burfi mix leaves the pan or forms a ball as shown . Turn off the heat
  7. Transfer it to a greased plate. spread it evenly
  8. With the given measurement we can make 30 pieces

Note:

  1. you can use sugar as well
