Rava Kesari | Kesari bath | Sooji Halwa Recipe

Happy New Year to all our readers. Our heartfelt thanks to each and everyone for your support and encouragement.
To celebrate the new year we will make simple yet delicious, most popular sweet Kesari bath or sooji halwa. This dessert is perfect for festival days or just to quench the sweet cravings! With the touch of cardamom and natural color and cooling effect from the saffron makes it more festive and delicious sweet.It is common to relish kesari bath with khara bath/uppittu , popularly called chow-chow bath.  This combination dish can be prepared in 30 minutes( yes , both sweet and khara), good for sudden unexpected guests.
You can put the kesari bath on a greased plate and spread it and cut into desired shapes, it will be semolina cake, best for the parties and get together.

Ingredients:

  • ½ cup Coarse Sooji/ Medium Rava
  • ½ cup Sugar
  • 2 to 3 TBSP ghee or more
  • 2 to 3 Cardamoms (powdered)
  • Pinch of kesari/Saffron soaked in milk
  • 1¼ cup water
  • 6 to 8 cashews(broken into small pieces)
  • 1 TBSP raisins

Method:

  1. Please watch Video for tips and instructions in Kannada
  2. Heat 2 tsp ghee in a pan on medium heat, fry cashews and raisins until the raisins puffs up and nuts turn golden brown, transfer it to a plate. Keep it ready.
  3. Dry roast the rava until the raw smell disappears and turns light golden brown.
  4. Transfer the roasted Rava to a plate.
  5. Boil the water in a pan, once it starts to boil reduce the heat to low and add ½ tbsp ghee.
  6. Now add the roasted rava slowly, stirring continuously. Cover it and cook it on low flame for a minute.
  7. Add sugar, a TBSP ghee along with saffron, mix it well, again cover it and cook it for 2 to 4 minutes,
  8. Then add one more TBSP ghee( if you like) , mix it continuously until you get the rava kesari consistency, turn off the heat and add fried raisins and cashews and cardamom powder. Mix it well and Enjoy the kesaribath

NOTES:

  1. If you don’t have kesari, skip it, don’t add any food colorings, instead use a small pinch of turmeric powder
