Kumbalakayi kadubu | Sweet Pumpkin Idli

Kumbalakayi kadubu or Sweet Pumpkin  Idli is another traditional recipe from south Indian kitchen. Sweet pumpkin is highly nutritious and very healthy for growing kids, rich in Vitamin A, good source of fiber which fills your stomach quickly and feels full for longer period.
Here is traditional kadubu or pumpkin sweet idli recipe.

Ingredients:

  • 1.5 cup Grated Pumpkin( wash and remove the skin and grate)
  • 1/2 cup chopped sweet pumpkin
  • 1/2 cup akki tari/rice rave
  • 1/2 cup powdered jaggery
  • 1/4 cup grated dry coconut(kobbari turi)
  • 2 tbsp chopped fresh coconut pieces
  • pinch of cardamom
  • 1/4 tsp salt
  • Around ¾ cup water

Method:

  1. Dry roast the rice rave until it slightly changes its color.
  2. Take jaggery in a pan. Add 2 tbsp water to jaggery and allow it to dissolve
  3. Strain it to remove any impurities
  4. Now boil this jaggery syrup for on medium heat 2 to 3 minutes and then turn off the heat.
  5. To this jaggery syrup add chopped pumpkin along with grated pumpkin, coconut pieces and grated dried coconut,salt, cardamom powder, and roasted akki thari, mix it well.
  6. Add 2 to 3 tbsp water and mix it, don’t add too much water. Keep it aside for 20 to 30 minutes

To make the kumbalakayi kadubu:

  1. Grease the plate with ghee, or if you are using idli plates grease the idli plates
  2. after 30 minutes: mix it well, put the mix on to the greased plate as shown in the video ( amount of mix depends on the size of the plate)
  3. Steam cook the idli/kadubu on medium heat for 15 to 20 minutes then turn off the heat.
  4. to check: wet your fingers and tough the kadubu, it should not stick to your finger
  5. If you are using idli plates to make the kadubu, follow the same procedure, grease the plates, put the mix, and steam cook for 15 minutes.
  6. Eat the kadubu with ghee
