ಮಾವಿನ ಹಣ್ಣು ಮತ್ತು ಮಂಗಳೂರು ಸೌತೆಕಾಯಿ ಹುಳಿ ಅಥವ ಸಾಂಬಾರ ಹುಳಿ ಸಿಹಿ ಉಪ್ಪು ಖಾರದೊಂದಿಗೆ ರುಚಿಯಾದ ಸೌತೆಕಾಯಿಯ ಪರಿಮಳದೊಂದಿಗೆ ಬಹು ರುಚಿ.

ಸೌತೆಕಾಯಿ ಮಾವಿನ ಹಣ್ಣಿನ ಸಾಂಬಾರ್ Cucumber Mango Sambar Recipe

Ingredients
  

  • 1/2 ದೊಡ್ಡ ಸೌತೆಕಾಯಿ cucumber/dosakai
  • 6 to 8 ಮಾವಿನ ಹಣ್ಣು mangos
  • 1/2 cup ತೊಗರಿಬೇಳೆ toor dal
  • 1/4 to 1/2 cup ಕಾಯಿ fresh coconut
  • 1 TBSP ಉಪ್ಪು ಇಲ್ಲವೆ ಉಪ್ಪು ರುಚಿಗೆ ತಕ್ಕಷ್ಟು salt/salt to taste
  • 2 TBSP ಸಾರಿನ ಪುಡಿ rasam powder
  • little ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು chopped cilantro /coriander leaves
  • few ಕರಿಬೇವು curry leaves
  • ಗೋಲಿಗಾತ್ರದ ಬೆಲ್ಲ Jaggery
  • 1 tsp ಅರಿಶಿಣ turmeric powder

ಒಗ್ಗರಣೆಗೆ:

  • 1 tsp ತುಪ್ಪ ghee
  • 1/2 tsp ಜೀರಿಗೆ cumin seeds/jeera
  • 1/4 tsp ಸಾಸಿವೆ mustard seeds
  • pinch ಇಂಗು asafoetida/hing

Instructions
 

  • Wash the mangoes and keep it ready.
  • wash and cut the cucumber, scoop and discard the seeds.
  • Wash and pressure cook the dal and cut cucumber on medium heat ( 2 whistle are enough) along with turmeric powder and 2 cups of water.
  • Grind coconut and rasam powder along with water to a fine paste.
  • Remove the mango skin and keep it as whole mango in a pan . Keep the peels in a plate.
  • Add water and extract all the remaining pulp from mango peel.
  • Add this water to the peeled mango. Add the grind masala. Add water to the mixer jar, add this to the pan.
  • Once it just stars boiling, add the cooked dal and cucumber , add salt, jaggery and curry leaves, allow it to boil on medium heat for 5 to 8 minutes.
  • Turn off the heat and garnish with chopped coriander leaves.

For seasoning:

  • Heat 1 tsp ghee in a ladle. Once it is hot enough add mustard seeds. Once the mustard seeds pops, add cumin seeds. Turn off and add hing. Add the prepared seasoning to the sambar.
  • Enjoy this sour sweet Mango-Cucumber Sambar with Rice.
