vegan Mac’n’cheese. Pasta recipe using homemade Vegan cheese
Easy to make vegan mac and cheese recipe. You can either follow this recipe to make the vegan cashew cheese along with cooking the pasta or you can prepare beforehand and add to the cooked macaroni pasta.

Ingredients for vegan mac and cheese:
- 1 cup macaroni pasta
- red, yellow, and green capsicum/bell pepper
- carrot
- tomato
- 1 tsp rock salt or salt to taste
- 3.5 cups of water
- (3 cups to cook pasta and
- 1/2. cup water to make vegan cheese)
For vegan cheese:
- 20 cashews along with
- 4 cloves of garlic,
- 1 green chlili (optional)
- 10 black pepper
- 1 tsp tapioca starch
- 1/2 cup water
Method:
- Cut the vegetables lengthwise as shown
Making vegan cashew cheese :
- Grind without adding water first, then add 1/2 cup of water, grind it to fine consistency
- Boil 3 cups of water, add the macaroni, let it cook, and stir in between.
- Once it is cooked, transfer some water to a cup(save it for later use)
- Then add cashew cheese mix,
- Add the water which we set aside from cooked pasta
- Reduce heat to low and let it cook for 2 minutes
- Turn off the heat and serve the pasta
