Tomato Potato Onion Gojju | Vegetable chutney – watch the video for detailed instructions.

Easy and delicious Green tomato, brinjal, potato and onion chutney or gojju. This is the healthiest side dish for rice, rotti, chapathi… This is no coconut chutney/gojju.

Ingredients for making  Tomato Potato Onion Gojju | Vegetable chutney:

  • 3 green tomatoes ( sour tomatoes are best for this recipe)
  • 2 small brinjal/eggplant
  • 1 medium size potato
  • 1 medium size onion
  • 3/4 tsp salt to salt to taste
  • Finely chopped coriander leaves

For seasoning:

  • 1 tsp oil
  • 1/4 tsp mustard seeds
  • 4 (+/-) green chilies(finely chopped)

Method:

  1. Wash and pressure cook the vegetables on medium heat . turn off the heat after 1 whistle and allow it to cool
  2. Remove the skin from the cooked vegetables and mash it or you can pulse it in a food processor or mixer
  3. Transfer it to a bowl and then add salt, chopped onion( if you don’t like raw onion you can saute the onion while preparing the seasoning) chopped coriander leaves, and mix it well
  4. heat the oil in a ladle, once hot add mustard seeds, after it pops add green chillies. Fry it until it turns white. Turn off the heat
  5. Add the seasoning to the chutney / gojju and mix it. Chutney is ready
  6. Goes well with rice, rotti, chapathi ……
