Akki shavige or rice shavige is one of the traditional recipes of karnataka. Made with rice flour or soaking the rice, grinding it. These rice noodles are very tasty, gluten free breakfast or lunch dishes. This can be eaten as lemon rice, or as sweet adding payasa / coconut milk. We already have the recipe of soaking the rice and then making this noodles with spicy and sweet payasam to go with it. Here in this akki shavige recipe made with home made rice flour, and seasoning with vegetables.

Ingredients for making akki shavige:
- 2 cups rice flour(use home made rice flour or idiyappam flour)
- 2.5 cup water
- 1 tsp cooking oil
For seasoning:
- 3 tbsp cooking oil
- 1 tsp mustard seeds
- 1/4 tsp turmeric powder
- 1 tsp kadle bele / chana dal
- 1 tsp urad dal / uddina bele
- 2 tbsp peanuts/groundnuts
- 2 tbsp powdered jaggery (optional)
- lime or lemon juice
- 1/4 cup or more fresh grated coconut
- around 8 green chilies(more or less)
- chopped coriander leaves
- few curry leaves
- thinly sliced onion
- thinly sliced capsicums
- and thinly sliced carrot
- ( Vegetables are optional)
Method:
- Grease the chakli press with a small sev disc. Grease the cooker pans and keep it ready
- Boil the water in a thick bottom pan along with tsp of oil, and tsp of salt on medium heat
- Add the flour and mix. turn off the heat and cover it, keep it aside for few minutes
- Once it is right enough to handle, oil your hand and start mixing. Consistency of the dough should be like this
- Fill the press with the dough, assemble it, and press it to the greased pan as shown here
- press one layer,then place banana leaf and press more shavige
- Repeat with another pan as well
- Steam cook the shavige on medium heat for 25 to 30 minutes, Then turn off the heat
- Transfer the cooked shavige onto a big plate and let it cool,
For making the shavige oggarane:
- Heat the oil in a pan on medium heat. Once hot add oil mustard seeds, after it pops add dals and peanuts
- After the dals turn golden brown add turmeric powder, green chilies, curry leaves fry it for few seconds
- Now add onions, sprinkle little salt, fry it for few seconds
- Add all the vegetables, fry it for 2 to 3 minutes on high flame,
- Add remaining salt, mix it. Turn off the heat.
- Now add jaggery and mix it. Let it cool,
- Mix this oggarane with shavige, lemon juice, and chopped coriander leaves,
- Mix it well and shavige is ready to serve.
