Ingredients for sweet corn kosambari recipe:
- 1/2 cup sweet corn
- 2 finely chopped green chilies
- 1 to 2 tbsp grated carrot
- 1 to 2 tbsp chopped coriander leaves
- 1 tbsp raisins / ona draakshi
- juice of 1/4 lime/lemon
- 2 tbsp grated coconut
- 1/4 tsp salt or salt to taste
For seasoning:
- 1 tsp cooking oil
- pinch of hing
- 1/2 tsp mustard seeds
- 1 tsp uddina bele / urad dal
- few curry leaves
Method:
- In a bowl combine corn, carrot, coconut, coriander, leaves
- Heat the oil in pan on medium low heat, once it is hot add hing, mustard seeds,
- After it pops add urad dal, fry it until the dal turns golden brown, then add green chilies
- Fry it for few seconds and then add raisins, and
- Let the raisins puffs up, then add curry leaves and fry it for few seconds, turn off the heat and add the seasoning to the kosambari
- Add salt, and lemon juice.
- Mix it well . Serve this tasty salad as a snack or with dinner or lunch.
