Sweet corn is in season, enjoy this delicious sweet corn kosambari or  salad which is vegan and gluten free salad recipe

Ingredients for sweet corn kosambari recipe:

  • 1/2 cup sweet corn
  • 2 finely chopped green chilies
  • 1 to 2 tbsp grated carrot
  • 1 to 2 tbsp chopped coriander leaves
  • 1 tbsp raisins / ona draakshi
  • juice of 1/4 lime/lemon
  • 2 tbsp grated coconut
  • 1/4 tsp salt or salt to taste

For seasoning:

  • 1 tsp cooking oil
  • pinch of hing
  • 1/2 tsp mustard seeds
  • 1 tsp uddina bele / urad dal
  • few curry leaves

Method:

  1. In a bowl combine corn, carrot, coconut, coriander, leaves
  2. Heat the oil in pan on medium low heat, once it is hot add hing, mustard seeds,
  3. After it pops add urad dal, fry it until the dal turns golden brown, then add green chilies
  4. Fry it for few seconds and then add raisins, and
  5. Let the raisins puffs up, then add curry leaves and fry it for few seconds, turn off the heat and add the seasoning to the kosambari
  6. Add salt, and lemon juice.
  7. Mix it well . Serve this tasty salad as a snack or with dinner or lunch.
