Akki hurittu is a traditional South Indian dish made from rice and is often consumed as a breakfast item or during fasting days.

Ingredients:

  • Rice

Method:

  1. Wash the rice 2 to 3 times.
  2. Add 2 to 3 cups of very hot water to the washed rice, mix it with a spoon, cover it, and keep it aside for 3 to 4 hours.
  3. Drain the water from the soaked rice.
  4. Keep a thick-bottomed pan on medium-high heat.
  5. Put a big spoonful of soaked rice in the pan and roast it.
  6. Once the water has evaporated, leave it for 2 to 3 seconds and continue roasting until it turns golden brown.
  7. Remove the roasted rice and spread it on a plate.
  8. Repeat the same procedure with the remaining soaked rice.
  9. Allow the roasted rice to cool down and then grind it into a fine powder.
  10. Store the akki hurittu in an airtight container.

Using hurittu in Recipes:

Grated Coconut and Jaggery or Sugar:

  1. Mix jaggery and coconut.
  2. Add hurittu and mix it.
  3. Add either water or milk and mix well.
  4. Enjoy the mixture as a sweet dish.

Tamarind Extract Drink:

  1. Take tamarind extract and add water and jaggery. Let it dissolve.
  2. Add hurittu and mix well.
  3. Drink the mixture.

Buttermilk or Curd with Salt or Jaggery:

  1. To the buttermilk or curd, add salt or jaggery and mix it well.
  2. Addhurittu and mix thoroughly.
  3. Drink the mixture.
