Carrot Palya recipe
This easy carrot palya goes well with rotis, as a side dish for rasam or sambar rice as well. Very simple and easy to make tasty, healthy side dish is this Carrot Palya.
I know many of you know how to make this easy palya, this is for beginners or just want to cook some simple dish with roti.

Carrot is an amazing root loaded with Vitamin A and beta carotene. The high level of beta-carotene acts as an antioxidant. It helps slow down the aging of cells. Chewing on a piece of carrot after each meal helps in maintaining healthy gums and teeth.

Ingredients to make carrot palya:
- 5 medium size carrots (wash and peel the skin and grate )
- or 2 to 2.5 cups of grated carrot
- handful of chopped cilantro/coriander leaves
- 5 to 10 curry leaves
- ¾ tsp salt
- ¼ cup fresh coconut
- tsp of lemon/lime juice (optional)
For Seasoning:
- 1 TBSP oil
- ½ tsp mustard seeds
- 1 tsp urad dal
- 2 slit green chillies
- handful of chopped cilantro/coriander leaves
- 5 to 10 curry leaves
Method:
- Heat the oil in a pan on medium heat
- Once the oil is hot enough, add mustard seeds, after it pops add urad dal. Fry it until the dals turn golden brown
- Now add green chilies, fry it for few seconds
- Now add shredded carrots, curry leaves and salt. Mix well and cook it for a minute or 2
- AFter 1 to 2 minutes,
- Usually carrots take a minute to cook, if not mix it well and cover it cook it for30 seconds. ot stir it for a minute.
- Before turning off the heat, add coriander leaves and coconut.
- Mix well and then add lemon or lime juice.
- Mix it and serve with rotis, rotti and as a side dish to rasam rice as well.
